Authentic flour tortillas in Sonora are made without gums, so Coyotas Founder, Janet Flores Pavlovich, set out to make a grain free tortilla without gums. After countless trials, she made a beautifully simple (and gum free!) tortilla that folds and holds the most challenging taco fillings without breaking.
Most store-bought tortillas use a variety of artificial or natural chemical preservatives to make their tortillas last as long as possible. At Coyotas, we decided to use temperature instead of chemicals. That's why we ask you to keep your tortillas in the refrigerator or freezer until you are ready to heat and eat them. I absolutely love these tortillas. I use them in place of bread, buns, etc. cassava is high in carbs, but ultimately for me the fact that these have minimal ingredients and are sent freshly made, is why I will continue to purchase them. They freeze really well so they last me a while.

This is hands down the best gluten-free tortilla! It wraps so great, and does not fall apart! And it tastes really great too :) I know this is going to sound dramatic but as a former foodie who was given a diet and lifestyle changing health diagnosis I have been searching to find some normalcy in my products.
