COYOTAS POLLO ASADO RECIPE

We love the taste and convenience of the pre-marinated Pollo Asado from Whole Foods, but there’s nothing like doing it yourself. Here’s the recipe, both ways.
INGREDIENTS
- 2x 1-pound packages pre-marinated “Pollo Asado” OR 2 pounds boneless chicken thighs
- 1/4 cup orange juice
- 1/4 cup lime juice
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoons paprika
- 1 teaspoons oregano
- 1 teaspoons ground pepper
- ¼ teaspoon ground clove
- 2 teaspoons salt
- 5 tablespoons olive oil
Make the Marinade:
1. In a small bowl, mix together orange juice, lime juice, minced garlic, cumin, paprika, oregano, salt, pepper, and olive oil.
2. Place marinated chicken thighs in a resealable plastic bag and pour marinade over chicken. Seal the bag and refrigerate for at least 30 minutes, or up to 24 hours.
Grill the Chicken:
3. Preheat your gas grill over high heat (500 degrees). If using charcoal, create a two-zone fire. When the grill is hot, scrub the grill grates with a wire brush.
4. Remove chicken from marinade and discard excess marinade, and place chicken on the grate over the coals.
5. Grill chicken for 4-5 minutes on the first side without moving or agitating to set char and ensure meat releases easily from the grill grates. Flip and continue cooking the chicken for another 4-5 minutes, or until fully cooked through and juices run clear.
6. Remove chicken from the grill and let rest for a few minutes before serving.
7. Serve with frijoles, guacamole, and of course, COYOTAS tortillas!
