LEFTOVER TURKEY TINGA TACOS

Make leftovers a bigger deal than Thanksgiving! Start with your leftover turkey meat (or a whole roasted chicken) and simmer for 10 minutes with a jar of sofrito rojo from our friends at Loisa and a little boost from a can of chipotle en adobo. It really is that easy. We tested it. Twice!

 

Serves 4-6

Total Time: 15 minutes

 

INGREDIENTS

3 pounds leftover roast turkey breast and thigh meat, roughly cut into 2 inch chunks (or 1 3-pound roast chicken)

1 12oz jar LOISA sofrito rojo

1 7oz jar chipotle chiles “en adobo”

1 cup water

Salt

12 SMALL OR MEDIUM COYOTAS TORTILLAS

Taco Toppings: diced onion, chopped cilantro, sliced avocado, crumbled Cotija cheese


INSTRUCTIONS

1. Prepare the filling: Combine leftover roasted turkey (or the meat from a whole roast chicken), sofrito, chipotle, and water in a saucepan and simmer for 10 minutes. Stir the turkey and sauce vigorously at the end so the meat shreds. Taste for seasoning.

2. Serve: Heat tortillas, assemble tacos & enjoy!
