Coyotas founder Janet Flores Pavlovich grew up in Hermosillo, Sonora—the birthplace of the flour tortilla. After working as a chef in both Mexico and the U.S., she returned home and rediscovered the beauty and simplicity of her region’s iconic tortilla.

Janet didn’t just want to recreate the tortillas she grew up with—she wanted to make something new. After countless tries, she created a tortilla with just four ingredients and no grains, gluten, or gums. Today, our team of artisans handcrafts Coyotas in small batches at our own facility in Southern California.
